Don't toss your tomato skins! 🍅 Those peels left over from canning or sauce turn into the brightest, most flavorful tomato powder. Swipe for how I make it 👉 How to make it: 1️⃣ Save the skins: peeled skins from blanched tomatoes, spread flat in a single layer. Not ready? Freeze them until you are. Skip any moldy or spoiled bits. 2️⃣ Dehydrate at 135–150°F for 6–12 hours, or in the oven on its lowest setting with the door cracked. Dry until they're brittle and SNAP, not bendy. Any leftover moisture can lead to mold. 3️⃣ Add the dried skins to a clean, dry spice or coffee grinder. 4️⃣ Grind in short pulses with the lid on. 5️⃣ Sift, then regrind any bigger bits for a fine powder. 6️⃣ Funnel it into a clean, dry, airtight jar. 🍝 How to use it: soups, stews, sauces, spice rubs, pasta, eggs and popcorn. Mix 1 tsp with a little water for a quick tomato paste! 🫙 Storage: keep it airtight in a cool, dark place and use within about 6–12 months for the best flavor. If it clumps, add a few grains of rice or a food-safe desiccant pack, and always use a dry spoon. Any mold or off smell? Toss it. Save this for canning season and follow for more 🍅

It sprouts best in warm soil (70–78°F), and a heat mat helps! Quick how-to: 1️⃣ Use ORGANIC store-bought ginger with plump little buds (

Brrrr it's cold this week! Tomatoes & ginger were harvested, peas trellised, made tomato powder from deydrated tomato skins, & brought my peppers inside overnight due to our first frost. Full blog post - https://pokketgardening.substack.com/p/first-frost-this-week
